Pilar and Daniel are both qualified in Sommelier studies at Valencia Polytechnic University. The cellar is kept at just the right temperature and damp for the best services. The glasses are made by Riedel Glas in Austria and Schott Zwiesel in Germany.
The cellar has over 340 references from the best wine-producing regions in the world, with a marked preponderance of Spanish wines. Over 60 oils, vinegars and salts are kept in another smaller cellar.
There are over twenty European raw milk cheeses.
For the end of a meal, there are 70 European sweet wines, over 20 infusions, more than 160 European liquors and a small cigar and habano selection.

Pilar is currently giving classes on liquors for María Luisa Martín Tejero’s "Sumiller Formación" and at Valencia Catering Federation. She is a member of the Board of Directors of the Menjar i Viure Association and of the Board of Directors of Valencia Restaurants Association. She also travels constantly in search of the best and hardest-to-find items for her most demanding customers - brands that do not get as far as Valencia with small and exquisite productions.
